What is Shajiang (Kaempferia galanga) ?

Kaempferia galanga aka aromatic ginger, sand ginger, cutcherry or resurrection lily, it is found primarily in open areas in southern China, Taiwan, Cambodia and India, but is also widely cultivated throughout Southeast Asia.

I love the aromatic of sand ginger but many cannot stand it.

My mom brought back a lot of sand ginger and its leaves from hometown Kulim.

The aromatic of the ginger makes me recall my childhood moment .

Mmn....cannot resist the sand ginger dish cook by my late grandma 30 years back...

I decide to cook something with sand ginger.

Here is how i cook the dish.

1) Cut sand ginger and garlic into pcs

2) marinate some slices of chicken with salt,sugar,dark soya sauce, corn flour

for about 10 minutes.

3) heat up the wok with oil

4) add in 1) and stir fry

5) add in 2) and stir fry until fragrant

6) add a little bit of water

7) add in the sand ginger leave

8) cook for a while and serve hot

Photo a bit blur...however.. dish taste yummy !

Orange Butter Cupcakes

Ingredients A
1. 175g butter
2. 225g sugar
3. Rind of 1 orange

Ingredients B

1. 125ml UHT milk
2. 1/2 tsp orange juice

Ingredients C

1. 250g flour
2. 2 tsp baking powder
3. 1 tsp salt

Ingredients D

1. 3 eggs

Method

Preheat oven to 175 ºC. Cream (A) till light and fluffy. Stir in (B) gradually. Fold in sifted (C) ingredients. Beat in eggs one at a time.Spoon batter into paper cups up to eight-tenths full. Bake for 10 to 15 minutes.

Thanks for the recipe of Jamie Oliver. Although the chicken a bit dry but it taste fantastic especially the roasted potatoes.

1) Pat a medium size chicken very dry with paper towels, rub including the cavity

with sea salt( 1 tsp), Rosemary(1 tsp), Mix Herbs(1 tsp), black pepper (1 tsp), Zest lemon ( 1 pc) .* rub also in between the skin and meat. Then place the chicken in the fridge for at least 4 hours or up to 24 hours.

2) Remove chicken from fridge and let it rest in the room temperature for at least 30 minutes.

Brush olive oil all over the chicken.

3) Peel and cut potatoes ( 6 pcs ) into halves or quarters.Put them into a pot of water with a pinch of salt together with the left over lemon. Bring to boil and continue cook for 10 minutes.

Drain the potatoes with a pinch of salt, freshly grounded black pepper and a little olive oil. Do this while the potatoes are still hot.

4) While the lemon is still hot, pierce it with the tip of a sharp knife about 10 times. Stuff the lemon inside the cavity of the chicken.

5) Put the potatoes in a roasting pan. Tuck the wings underneath the chicken and place it breast side up, on the potatoes. Cook and preheat oven at 200 degC for around 40 minutes. Turn the chicken over and roast for further 30 minute. Turn the chicken breast side up again for 10 to 15 minutes until the chicken is browned and the potatoes are golden.

6) Carefully remove the lemon from the cavity. Let the chicken rest for 10 minutes before serving. This allows the juices to settle and the chicken will be much more succulent

Egg Tart Is the Right Start

Here is the recipe i copy from http://coffeeforjoy.blogspot.com/, i just reduced a bit on the sweetness. Its good for me who know nothing about baking, egg tart is just the right start !

For dough:

300gm flour

200gm butter

2 tbsp milk powder

1 tbsp castor sugar

2 tbsp custard powder

1 egg

For egg syrup :

140gm castor sugar boiled in 350ml water

with pandan leaves

5 eggs

100ml fresh milk

Procedure :

1. Boil 350ml water with 140gm castor sugar and pandan leaves then put aside and let it cold.

2. Put all the dough ingredients into a big bowl and mixing them with hands.

3. After the syrup had cooled, add in the beaten eggs and 100gm of fresh milk. Make sure to filter the egg syrup a few times to make it smooth and even.

4. The dough must fill the moulds not too thin and not too thick. Fill the moulds with the eggs syrup, approximately 3 tablespoon per mould.

5. Bake the tarts in oven for 25-30 minutes at 180 C.

Mixed Fruit Enzyme - Day 1 and Day 7

Day 1

A week After

This time, i used left over fruits from fridge. Most blogger encourage to use fresh fruit instead but i guest no harm to try . The fruits i used are as follow:-
1) 2 oranges
2) 3 kiwis
3) 3 apples
4) 2 lemons
5) 4 pcs of brown sugar bar

Make sure the air tight glass container, knife and chopping board are dry. Put in the fruits immediately after cut then follow by the brown sugar bar. At last put the lemon at the upper layer. Air tight the container lid. Ensure to shake(rock and roll) the glass container everyday. Remember to open the lid after 3 days the fruits fermented. Then close back the lid and continue shaking the container everyday for 2 weeks before harvesting.

Fried Chicken With 腐乳 Fu-Chung Bean Curd+ 五香粉Rempah Ratu
1）Marinate 10pcs chicken with a small cube of fu-chung bean curd + 1.5 teaspoon of rempah ratu + 1 table spoon of sugar + 1 tea spoon of salt + Corn flour.

2) Heat up oil in a wok and then deep fry the chicken until light brown.

Fried Ikan bilis with onion

1)Heat up oil in wok and fry ikan bilis until crispy then dish out.

2) Use the remaining oil to fry onion and cili paste

3) Pour in life cili sauce in the wok + 1 table spoon sugar + a bit of water

4) Add in the fried ikan bilis

5) Stir well and dish out.

The Harvesting Of My DIY Dragon Fruit Enzyme

before open up the lid , i doubt why there are so much of bubbles at the final stage. I noticed the enzyme done by my friend was quite clear compare to mine.

Exactly 2 weeks from 070909 to 200909, i open up the lid of the container.

The smell is a bit sour ....!!!

Ah gu asking me in doubt, " Can this thing be consumed??".... Hehe...I told him to be a white mouse before letting our chidren to try on it.

I sieve the contains a few times to thinner down the juices before pouring it into a glass bottle.

My dragon fruit enzyme is really sweet, i think this is because the dragon fruit itself is sweet and the sugar bar that i add in is too much. The right ratio should be 3 - 1. Mine one is 3 - 1.5.

I store the enzyme in the fridge.

After an hour in the fridge, i open up the lid and smell it. It really smells good like red wine.

I pour a table spoon with some ice cube into a small glass. My daughter take a sip of it and ......

..........she is asking for "more".

Well, If everybody is ok after consume my homemade enzyme. .....................

White membrane grow in Dragon Fruit Enzyme

After a week, i found some white membrane grow on the surface of my diy dragon fruit enzyme. I quickly asked my buddy at http://coffeeforjoy.blogspot.com/, she said hers also the same after a few days the fruits fermented. She then told me that i need to shake the glass container to ensure the top layer always in wet condition to avoid the white menbrane grow. Another friend told me that white membrane is good,and it is not mouldy , it is just like the SKII.....!!!!

I still worry and keep on asking myself whether it can be consumed after 2 weeks?

It says, If there is a white membrane, do not worry as it is a normal occurrence of bacteria activity that forms during fermentation.

How to make Dragon fruit enzyme?

Easy! I Straight away copy the way of how to do it from my buddy's blog http://coffeeforjoy.blogspot.com/.

1) Buy an air tight glass container from Ikea cost RM12.90

2) Ensure the container is totally dry

3) Cut dragon Fruit into pieces

4) Put a layer of cut dragon fruits then follow by a pc of brown sugar in rectangular shape

5) Continue step 4 until the container is 3 quarter full

6) Close the air tight cover and thats it

Main course for my day 11 menu is sambal petai. Ever since i was young, i loved the sambal made by my grandma. This is the best dish ever cooked by my late grandma. . I remembered during school time when i backed from school..the first word out from my mouth was : " Popo! what is the dish for today?"...then Popo will answered in Hakka :" giu moon choy".... haha....

..... " giu " means dog, "moon" means ask, "choy" means dish.....so the answer is :" a dog is asking for a dish......if you are hakka moi or hakka chai, you will sure understand what i mean.

Although my sambal petai is not as yummy as what my grandma's sambal petai, but ah gu and niemoss still enjoyed it very much...haha...

Here is how i do it.

1) Blend dried prawn (100gm) then put aside.

2) Blend shallot (10pcs), garlic( 6 slices), dried cilli ( 5 pcs), Red fresh cilli ( 3 pcs), Belacan or prawn paste ( small cube about half inch), add it a little bit of water and blend together.

3) Add in 3 table spoons of oil into the wok or frying pan, add in ingredients 1) and 2) together, fry until fragrant, You may need to add in additional oil if it is too dry during frying.

4) Then add in petai and fry together.

5) Add in sugar to taste, stir evenly and thats it.

day 10 menu - Curry Chicken BABAS

Simple cooking method and the ingredients are :-

1) Marinate chicken with half packet of 25gm Babas meat curry powder & 1.5 tea spoon of salt for roughly 15-20minutes.

2) Blend ( Shallots(10pcs), Garlic(5 slices), Serai/lemon grass ( 3 stalks), shrimps paste/Belacan(2cmx2cm), Dried chilli(5 pcs), Red chilli (3 pcs), Kunyit/turmeric ( 4cm long).)

3) Cut potatoes into pcs.

4) Get ready a big bowl of water+ coconut milk +another half packet of the curry powder.

5) Deep fried the marinated chicken and potatoes seperately

6) Heat up a wok and stir fry 2) until fragrant and pour in the deep fried marinated chicken.

7) Pour in 4) into the wok

9) Pour in the deep fried potatoes into the wok

10) Add in curry leaves and cook until boiling.

11) Thats it ! ..But remember to serve with hot fragrant rice.

I learned to cook chicken rice from auntie tan, ms yap mom also my son's nanny 5 years ago. Now still carry on with the method and recipe cause its simple but taste good.

Recipe and Cooking method.

1) Wash, drain rice and put aside.
2) Heat up the rice cooker. Add in a table spoon of oil. Add in ginger and fry until fragrant.
3) Pour in the rice and stir together with ginger in the rice cooker until fragrant. Add water to cook the rice as usual. Remember to put in some salt and cover it.
4) Marinated chicken.( Cut chicken into pieces, soaked mushroom and cut into slices, a few slices of ginger, oyster sauce, pure sesame oil, salt, thick soya sauce, light soya sauce). Mixed together all these ingredients and marinate at least half an hour.
5) Pour in the marinated chicken into the rice cooker when the water is still boiling. Cover until the rice is cooked.
6) Serve with coriander and "Klang wellknown sauce" ( garlic,cili padi and light soya sauce).

1) Marinate fish with "serbuk kunyit" (turmeric powder) for 30minutes, drain and fry.

2) Steam brocolli for 10 minutes. Fry garlic,prawn,add in salt,light soya sauce,water,oyster sauce.

3) Fry garlic on a pan, add in marinate chicken chunk, pour in a bowl of water and bring to boil, add fish ball and salt to taste. Garnish with coriander.

Spaghetti With Traditional Italian Creamy Sauce

Who ever wish to cook a quick meal can try up this. My son Niemoss who prefer western food love this dish very very much.

What you need : 1) Spaghetti 2) Button Mushroom 3) Prawn 4) Leggo's Altredo pasta sauce (with fresh cream and cheese ) 4) Olive oil 5) Garlic 6) Salt 7) Parsley flakes 8) Black pepper

Simple Cooking Steps

1) Bring water to boil.

2) Add in spaghetti and a tea spoon of salt

3) Cook the spaghetti for 13minutes

4) Drain well the spaghetti and serve on plates

5) Heat up Olive oil on a pan

6) Add in garlic, prawn, button mushroom, salt to taste and

add in a little bit Leggop's Altredo pasta sauce, stir well and

cooked. After cooked dish out on top of the cooked spaghetti.

7) Bring pasta sauce to boil

8) Serve the pasta sauce over cooked spaghetti and sprinkle with

parsley flakes and black pepper.

Really busy the past few weeks to plan and figure out the color scheme for my kitchen and also the design for my backyard garden.

Hardly find locally the style that i dream of.

Surfing net really helps me to find out the real taste for my cup of tea. I decided to have a kitchen with white,wood and olive green in combination. While for the garden, it may be mixing with kennel for "minnie" and a vegetable garden.

We went to TESCO SETIA ALAM last week. Proton Exora was having a roadshow there.
I am thinking to own this MINI MPV to replace my 10 year old little Kancil, unfortunately it was not the right time now. My husband really like this car as according to him it looks alike Toyota Wish.

We met one of the sales representative who is doing others branded car road show surprisingly telling us that Proton Exora is worth to own as it share the platform of toyota wish and had copied the best part of others multipurpose car.

My husband has test drive the car and found out that it is a bit under power but for me it is find. May be we will figure out to own this car once settle down the extension of our new house.

Tonight, when brushing teeth, Niemoss ( my 10 year old son) would like to join me. Then the little one (my 5 years old daughter) also tried to squeeze in the middle ...Well!.. Off caurse there is not enough place for 3 of us to brush teeth together!...But, everybody seems could'nt wait!!!!...The little one yell while Niemoss also fight for his right as he came in first.....What should i do now???

At that moment I knew that if i keep on mentioned : " Wait for your turn !" I am sure nobody will listen to me...

So, i told them in the reversing way... " Alright, i prefer to make a concession and tolerate!, both of you can continue fight for your turn...! "
Suddenly the room became quiet>>>...
Then Niemoss said to his sister : " Alright ! Meii Meii, i will also give way, you can brush your teeth first.!"
So, Whats the feeling of the little one now? I am sure she will whispered in her little heart..."mmm....Its no fun to be a king that always being the first, i rather wait for my turn than do thing alone..!"

This is a new book i bought for Meii Meii, perhaps this could help to build up a right attitude.

In Malaysia, there are many working moms like me who need to work in the office from 8:00 am to 5:00pm. After work, those working moms may rush back to prepare dinner for the family, some no need as they have the elderly to cook for the whole family. Some may have maid to get ready the dishes on the table and off course some may eat outside or "Da Pao" means take away.

I am the one who need to rush back and cook for a family of 4 because there is always a big baby ( my husband) who everyday requesting for " A bowl Of Soup ".

I am not a good chef. There are still lots more to learn and to improve. But...I like to cook, thats the main momentum to push me forward....Alright, i will post my daily menu for everybody to glance through. One important point to highlight is, i have only one hour to prepare the dinner...So lets see what the result shown in 1 hour fast cook.

Why i need a Dog ?

A couple weeks ago, when i was back from work approximately by 5pm, one of the front windows was open widely. I am sure my house became another target for the bad guys. The area i stayed had many cases of thieves break in......Staring at the window, afraid that may be the thieves were still inside the house, i immediately called my hubby, Ah Gu....Ah Gu back in a few minutes time and soon he made a call to the nearby police station. We waited for the arrival of the policemen and once they arrived, we followed them entered the house....At that moment, i knew that the "ang paw" money that i just countered and brought down from upstairs were sure gone. ......But Thank god, the thieves were actually directly rush to my master bedroom upstairs and found nothing (cash) there but only managed to take an old labtop. The policemen just can't do anything but we still need to follow normal procedure :" 1st : Make police report , 2nd : Keep the report at home."....

When we returned home, it was late evening...Something came into my hubby's mind....
He said : " We must have a guard dog to look after our house , lets go to Pets Safari, Now !" ...very demanding and impatient. So,...The whole family rushed to Ikano Power centre Pet Safari in the late evening to look for a dog. Unfortunately, the shop was closed on that day.....

....We all came back with disapointment.

I Bought A Labrador Retriever through Website

One week after the incident, when surfing the net, i found out that the pure breed puppies with microchips and MKA cert were selling in lower price compared to the puppies sold at pet shops around KL. ie for a golden retriever it is different by RM1000 to RM1500................... .....When a picture of a white and adorable labrador with RM900 catch my eyes, i was attracted with her clean and cute face and i told myself that this is the one. I contact the seller and it was a guy. The guy told me that i am the 10th person who contact him on that day and if i am okay with the price i shall needed to bank in RM200 to his account as booking fees. Feeling that although it is quite rush to identity a person personality but i am sure those who are dealing with pets bussiness must be a loving and kind one. I called the seller again and asking for more information, he told me that his pet shop at Penang had only left one female puppy, when i asking whether that puppy is the one in the web, the answer he gave is " It is almost the same....He convinced me not to worry as he can mms me the puppy photo. Unfortunately, i can't view the puppy photo at all.... 10 minutes later, the guy called me again and saying that there was a visitor at his pet shop at Penang and seems interested to purchase that female puppy too....And if i really want that puppy i must make a quick decision... But....I insist to view the photo prior to confirm the deal....Then, the guy suggest to send to my hubby's phone. I agreed with him and mentioned that if my hubby like the puppy then thats the deal....

Later on..

This cute baby doll is my daugter favourite doll. We brought him back from Hattyai , Thailand cost 400 Thai baht.
My husband named him " Huan Chu". My daughter call him " Fun Chu" as she can't pronounds it correctly.
" Huan Chu" is in hokkien dialect and it means Sweet potato

Anyway, he bring laughter to the whole family by

lifting up his little brown hair.....

............Just as Simple as this !
